AQA 8300 is assessed by three papers of 1 hour 30 minutes each — Paper 1 non-calculator, Papers 2 and 3 calculator — at both tiers. Foundation covers grades 1–5; Higher covers 4–9 and adds the harder algebra, geometry and statistics topics.
Your school enters you for one tier, usually decided by mock results. If you're aiming at a grade 6 or above you need the Higher entry; if a solid pass is the goal, Foundation gives you more accessible papers to show it on.
